Aflatoxins are toxic metabolites produced by Aspergillus. They can be synthesised both during storage and in the field. Several factors such as high temperatures, high humidity, hydric stress or physical damage can favour their synthesis.

Some 20 types of aflatoxins have been identified, of which M1, metabolite of B1, should be highlighted because of its excretion in milk, constituting a concern in public health, as well as affecting the health and productive yield of dairy ruminants.

The entry of mycotoxins into the production chain is very difficult to control due to their high heterogeneicity, incidence, stability and resistance, causing  them to remain in the feed and making it difficult to eliminate them.
